Healthy Ceasar Salad (no mayo!)

In the mood for a creamy Ceasar salad, but not in the mood to eat something too heavy, with mayo etc? This is the perfect recipe for you! With this creamy, tasty yogurt dressing you'll get exactly the feels of a Caeser salad without the heavy "side effects" :).

Serves:

1-2 person


Ingredients:

Mixed leaves

1/2 Avocado

2 eggs

Tomatoes (handful)

Pine nuts

Dressing:

Greek yogurt

Olive oil

Honey

Dijon mustard

Garlic powder

Salt and pepper


Method:

  1. Boil your eggs (6-7min)

  2. Cook some pine nuts on low fire until slightly turned brown.

  3. Prep dressing: 2/3 tbsp of greek yogurt (depending on how creamy you like it), add 1 1/2-2 tbsp of olive oil, mix a bit. Add 1/2 tsp dijon mustard, 1 tsp honey, salt and pepper, and mix again. Sprinkle with some garlic powder (it really does the trick! WORTH IT!), mix a bit more.

  4. Put a handful of mixed green leaves in bowl. Add tomatoes and avocado. Add dressing and stir it all together.

  5. Top with eggs and pine nuts.
