Healthy Chocolate Chips Cookies (Inspired by EarthyAndy)
I am a big fan of the Hawaiian blogger EarthyAndy and her adorable family. She makes tasty vegan recipes, and once she shared a vegan (gluten-free) cookie recipe made out of a special ingredient.... CHICKPEAS. I was a bit sceptic at first, but since I tried them I can't stop making them. The chickpea taste is not too pronounced and the taste and texture really does the trick. I have created my version of her recipe, with very few modifications. They are absolutely delicious and chewy (look at this🤤):

Ingredients
- 1 1/2 cup canned chickpeas
- 1/2 Organic peanut butter or almond butter
- 1/4 Agave syrup
- 1/2 cup dark (vegan) chocolate chips
- 2 Baking powder
- Pinch of salt
- Pinch of shredded coconut
Method
Turn oven on to 175 degrees Celsius (345F)
Rinse chickpeas with water in strainer
Add to blender (in this order): chickpeas, nut butter, agave syrup, baking powder, pinch of salt
Blend until it forms a 'cookie dough' texture
Add chocolate chips at the end while blender is still on (slower)
Scoop dough with tbsp and form cookies on oven tray
Sprinkle with some shredded coconut and a bit more salt
Bake for 20min, 175c.
